  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water.
  3. In a separate bowl, whisk together the sugar and eggs until pale and creamy.
  4. Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly.
  5. Sift in the flour and cocoa powder, and gently fold until just combined.
  6. Stir in the lavender extract.
  7. Pour the batter into a greased and lined cake tin.
  8. Bake for 30-35 minutes or until a skewer inserted into the center comes out with a few moist crumbs.
