Ingredients
  • 500 gram Potatoes
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Milk
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 cup Cheddar cheese
Instructions
  1. Peel and chop the potatoes, onion, and garlic.
  2. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until fragrant.
  3. Add the chopped potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat to simmer. Cook until the potatoes are tender.
  4. Using a blender or immersion blender, puree the soup until smooth. If desired, leave some chunks of potato for texture.
  5. Stir in the milk, salt, and pepper. Cook for another 5 minutes.
  6. Serve the soup hot, garnished with grated cheddar cheese.
