  1. Preheat the oven to 200°C (400°F).
  2. Remove the stems from the portabella mushrooms and set aside.
  3. In a pan, heat olive oil and sauté the chopped onion and minced garlic until translucent.
  4. Add the spinach and cook until wilted. Remove from heat and set aside.
  5. In a small bowl, mix Dijon mustard, thyme, salt, and black pepper.
  6. Brush the portabella mushroom caps with the mustard mixture.
  7. Place the mushroom caps on a baking sheet and bake for 10 minutes.
  8. Roll out the puff pastry and cut into 4 equal squares.
  9. Place a spoonful of the spinach mixture on each pastry square.
  10. Top with a baked mushroom cap.
  11. Fold the pastry over the mushroom and seal the edges.
  12. Beat the egg and brush it over the pastry.
  13. Bake in the preheated oven for 20 minutes or until golden brown.
  14. Allow the Wellingtons to rest for 10 minutes before serving.
