Ingredients
  • 200 gram Pistachios
  • 100 gram Butter
  • 100 gram Granulated sugar
  • 1 unit Egg
  • 150 gram All-purpose flour
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, pulse the pistachios until finely ground.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and salt.
  5. Gradually add the ground pistachios and flour, mixing until the dough comes together.
  6. Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch.
  7. Cut out thin rectangular shapes using a knife or cookie cutter.
  8. Place the pistachio thins on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are golden brown.
  10. Allow the thins to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  11. Serve and enjoy!
