Ingredients
  • 1.5 cup Graham cracker crumbs
  • 1/2 cup Unsalted butter
  • 1.5 cup Goat cheese
  • 1 cup Cream cheese
  • 1/2 cup Granulated sugar
  • 2 large Eggs
  • 2 tablespoon Tequila
  • 1 teaspoon Vanilla extract
  • 1/2 cup Crushed pineapple
  • 2 tablespoon All-purpose flour
  • 1/2 cup Whipped cream
  • 8 piece Pineapple slices
  • 8 sprig Mint leaves
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat goat cheese, cream cheese, and sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in tequila, vanilla extract, crushed pineapple, and flour.
  4. Pour the mixture into the prepared crust. Bake for 55-60 minutes or until the center is set.
  5. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cake from the pan. Allow the cake to cool completely.
  6. Refrigerate for at least 2 hours or overnight.
  7. Serve chilled with whipped cream, pineapple slices, and mint leaves on top.
