Preheat the oven to 325°F (165°C).

Mix graham cracker crumbs and melted butter; press onto bottom of 9-inch springform pan.

Beat cream cheese, sugar, and vanilla in a large bowl with an electric mixer until well blended. Add melted white chocolate; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.

Bake 40 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours or overnight.

Top with whipped topping just before serving.
