Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.25 cup Sugar
  • 0.33 cup Butter, melted
  • 1 tablespoon Instant coffee granules
  • 2 tablespoon Water, boiling
  • 2 package Cream cheese, softened
  • 0.75 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 large Eggs
  • 1 cup Whipped topping
  • 2 teaspoon Cocoa powder
Instructions
  1. Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture onto bottom of a 9-inch (23 cm) springform pan.
  2. In a small bowl, dissolve instant coffee granules in boiling water. Set aside.
  3. In a large bowl, beat cream cheese, sugar, and vanilla extract until well blended. Add eggs, one at a time, beating on low speed after each addition. Stir in coffee mixture. Pour over crust.
  4. Bake for 35 minutes or until center is set. Cool completely. Refrigerate for at least 2 hours.
  5. Spread whipped topping over cheesecake. Sprinkle with cocoa powder. Serve chilled.
