Ingredients
  • 1 cup Persimmons
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 stick Unsalted butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 cup Chopped walnuts
  • 0.5 cup Powdered sugar
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9-inch baking dish.
  2. In a large bowl, mash the persimmons until smooth.
  3. In a separate bowl, cream together the butter and sugar. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the mashed persimmons. Mix until well combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared baking dish and spread it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk together the powdered sugar and lemon juice to make the glaze.
  11. Drizzle the glaze over the cooled bars.
  12. Cut into squares and serve.
