Ingredients
  • 2 cup All-purpose flour
  • 2 tablespoon Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Pepper Jack cheese
  • 1 cup Beer
  • 4 tablespoon Butter
  • 1 Egg
  • 1 diced Jalapeno pepper
Instructions
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, combine the flour, sugar, baking powder, salt, and diced jalapeno pepper.
  3. Add the grated Pepper Jack cheese and mix well.
  4. In a separate bowl, whisk together the beer, melted butter, and egg.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
