Preheat the oven to 375°F (190°C).

In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.

In a large bowl, cream together the unsalted butter, peanut butter, granulated sugar, and brown sugar until well combined.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the roasted peanuts.

Roll the dough into 1-inch (5 cm) balls and place them on a baking sheet lined with parchment paper.

Use a fork to create a crisscross pattern on top of each cookie.

Bake for 8-10 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
