  • 0.5 cup Peanut butter
  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar
  • 0.5 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1.5 cup Quick oats
  • 0.5 cup Roasted peanuts
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the peanut butter, unsalted butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Stir in the quick oats and roasted peanuts.
  7. Drop rounded tablespoonfuls of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until lightly golden brown.
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
