Preheat the oven to 350°F (175°C). Grease and line a baking dish.

In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg and vanilla extract. Add to the flour mixture and mix until well combined.

Press two-thirds of the mixture into the prepared baking dish to form the crust.

In another bowl, mix together the peaches, raspberries, cornstarch, lemon juice, and brown sugar. Spread the fruit mixture evenly over the crust.

In a small bowl, combine the rolled oats, brown sugar, ground cinnamon, and remaining crumb mixture. Sprinkle this mixture over the fruit.

Bake for 40 minutes, or until the top is golden brown.

Allow to cool in the baking dish for 30 minutes, then transfer to a wire rack to cool completely.
