Peach Crumb Bars
Peach crumb bars are a popular dessert in the southern United States, especially during peach season.

Preheat the oven to 350°F (175°C).

In a medium bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and mix well to form a dough.

Press half of the dough into the bottom of a greased 9x9-inch baking dish.

In another bowl, combine the peeled and sliced peaches, lemon juice, cornstarch, and cinnamon. Toss until the peaches are coated.

Spread the peach mixture evenly over the dough in the baking dish.

In a small bowl, combine the brown sugar, rolled oats, and chopped pecans. Sprinkle the crumb topping over the peaches.

Bake for 40-45 minutes, or until the topping is golden brown and the peaches are bubbling.

Allow to cool for at least 30 minutes before cutting into bars.
