  2. In a bowl, mix the matzo meal and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time and continue beating until well incorporated.
  4. Add the lemon juice, vanilla extract, sour cream, and salt to the cream cheese mixture and beat until smooth.
  5. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake in the preheated oven for 40 minutes or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven for 2 hours.
  8. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
  9. Serve chilled and enjoy!
