  • 1 cup Orzo Pasta
  • 1 cup Wild Rice
  • 1 medium Cucumber
  • 1 cup Cherry Tomatoes
  • 1 small Red Onion
  • 1 cup Kalamata Olives
  • 1 cup Feta Cheese
  • 0.5 cup Fresh Parsley
  • 3 tablespoon Fresh Lemon Juice
  • 2 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Cook the orzo pasta and wild rice according to package instructions. Once cooked, drain and let them cool.
  2. In a large mixing bowl, combine the cooked orzo pasta, wild rice, cucumber (diced), cherry tomatoes (halved), red onion (thinly sliced), kalamata olives (pitted and halved), and crumbled feta cheese.
  3. In a small bowl, whisk together fresh lemon juice, olive oil, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad and toss everything together until well combined.
  5. Let the salad rest for about 10 minutes to allow the flavors to meld together.
  6. Garnish with fresh parsley and serve chilled.
