Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Pumpkin pie spice
  • 1/2 teaspoon Cinnamon
  • 1 cup Canned pumpkin puree
  • 1 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 1/2 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Rum or bourbon
  • 1/2 cup Chopped nuts (optional)
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  3. In the same bowl, add the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, vanilla extract, and rum or bourbon. Mix until well combined.
  4. Fold in the chopped nuts, if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes.
  8. Transfer the bread to a wire rack and let cool completely before slicing.
  9. Serve and enjoy!
