Ingredients
  • 1.5 cup Quick oats
  • 0.5 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Baking soda
  • 0.5 cup Unsalted butter, melted
  • 1 cup Light brown sugar
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1 cup Semi-sweet chocolate chips
  • 0.5 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the quick oats, all-purpose flour, salt, and baking soda. Mix well.
  3. In a separate large bowl, mix together the melted butter, brown sugar, granulated sugar, and vanilla extract until well combined.
  4. Add the egg to the wet mixture and mix until fully incorporated.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips and chopped walnuts.
  7. Transfer the dough onto the prepared baking sheet. Flatten and shape into a rectangle using your hands or a spatula.
  8. Bake for 15-20 minutes or until the edges are golden brown.
  9. Remove from the oven and let it rest on the baking sheet for 10 minutes.
  10. Carefully transfer the cookie brittle onto a wire rack to cool completely.
  11. Once cooled, break into pieces and serve.
