Ingredients
  • 1 cup Rice
  • 2 large Tomato
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Bell Pepper
  • 2 tablespoon Vegetable Oil
  • 2 cup Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • to taste for garnish Cilantro
Instructions
  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the onion, garlic, and bell pepper to the skillet and cook until softened.
  4. Stir in the rice, cumin, paprika, salt, and black pepper, and cook for 2 minutes.
  5. Add the tomatoes and vegetable broth to the skillet and bring to a boil.
  6. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let the rice rest for 5 minutes.
  8. Fluff the rice with a fork and garnish with cilantro.
  9. Serve hot and enjoy!
