Ingredients
  • 1 cup Bran cereal
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 2 large Eggs
  • 1/2 cup Brown sugar
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup Raisins
  • 1/4 cup Chopped nuts
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the bran cereal, flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs and brown sugar until well combined. Stir in the milk, vegetable oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the raisins and chopped nuts.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
