  1. In a food processor, combine flour, butter, sugar, and salt. Pulse until mixture resembles coarse crumbs.
  2. Add egg yolks and pulse until dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough on a lightly floured surface and transfer to a tart pan.
  6. Arrange sliced nectarines on top of the dough.
  7. Brush the nectarines with apricot jam.
  8. Sprinkle sliced almonds on top.
  9. Bake for 35-40 minutes until crust is golden and nectarines are tender.
  10. Allow to cool before serving.
