Ingredients
  • 8 ounce Macaroni
  • 2 cup Cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 cup Milk
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 sliced Jalapeno peppers
  • 1 cup Tortilla chips
  • 2 tablespoon Fresh cilantro
Instructions
  1. Cook the macaroni according to the package instructions. Drain and set aside.
  2. Preheat the oven to 350°F (175°C).
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour, cumin, paprika, garlic powder, salt, and black pepper. Cook for 2 minutes, stirring constantly.
  4. Gradually whisk in the milk and cook until the mixture thickens, about 5 minutes.
  5. Remove the saucepan from the heat and stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
  6. Stir in the cooked macaroni and sliced jalapeno peppers.
  7. Transfer the mixture to a baking dish and top with crushed tortilla chips.
  8. Bake for 20-25 minutes, until the cheese is bubbly and the top is golden brown.
  9. Remove from the oven and let it rest for 5 minutes.
  10. Garnish with fresh cilantro before serving.
