Ingredients
  • 500 gram Leeks
  • 500 gram Potatoes
  • 4 cup Vegetable stock
  • 2 tablespoon Butter
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Chives
Instructions
  1. Wash and chop the leeks.
  2. Peel and dice the potatoes.
  3. In a large pot, melt the butter over medium heat.
  4. Add the leeks and cook until softened.
  5. Add the potatoes and vegetable stock.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.
  7. Using an immersion blender or a regular blender, puree the soup until smooth.
  8. Stir in the milk, salt, and black pepper.
  9. Simmer for an additional 5 minutes.
  10. Serve hot, garnished with chives.
