Heat butter in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Add sliced mushrooms and cook until they release their moisture and start to brown.

Sprinkle flour over the mushrooms and stir well to coat.

Slowly pour in vegetable broth while stirring continuously. Bring to a simmer.

Reduce heat to low and stir in heavy cream, thyme leaves, salt, and black pepper. Simmer for 15 minutes.

Remove from heat and let the soup rest for 5 minutes.
