Cut the tops off the bell peppers and remove the seeds. Place them in a baking dish.

In a saucepan, cook the quinoa according to package instructions.

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.

Add black beans, corn, diced tomato, cooked quinoa, and spices to the skillet. Stir well to combine.

Spoon the filling mixture into the bell peppers.

Top each stuffed pepper with shredded mozzarella cheese.
