Ingredients
  • 2 pound Sweet potatoes
  • 4 tablespoon Butter
  • 1 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1/2 cup Pecans
  • 1/2 cup Marshmallows
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into small cubes.
  3. Boil the sweet potatoes until tender, then drain and mash them.
  4. In a mixing bowl, combine the mashed sweet potatoes, butter, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Sprinkle pecans over the top.
  7. Bake for 30 minutes.
  8. Remove from the oven and top with marshmallows.
  9. Return to the oven and bake for an additional 15 minutes, or until the marshmallows are golden brown.
  10. Allow to rest for 10 minutes before serving.
