Ingredients
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 can Canned diced tomatoes
  • 2 tablespoon Tomato paste
  • 1 cup Mixed vegetables (frozen)
  • 2 leaf Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Pasta
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.
  2. Add vegetable broth, diced tomatoes, tomato paste, mixed vegetables, bay leaves, dried thyme, salt, and black pepper. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Add pasta and cook until al dente.
  5. Remove bay leaves and garnish with fresh parsley.
  6. Serve hot and enjoy!
