Ingredients
  • 1 cup Butter
  • 1 cup Granulated sugar
  • 1 Egg
  • 1/4 cup Molasses
  • 2 cup All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Ground ginger
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1/4 cup Granulated sugar (for rolling)
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and molasses.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Roll the dough into 1-inch balls, then roll each ball in the granulated sugar to coat. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 8-10 minutes, or until the edges are set and the tops are cracked. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
