Mock cherry pie
Mock cherry pie is called ‘mock’ because it is made with tart cherries instead of traditional sweet cherries.

Preheat oven to 400°F (200°C).

Roll out half of the pie crust and line a 9-inch pie dish.

In a large saucepan, combine cherries, sugar, cornstarch, almond extract, and food coloring (if using). Cook over medium heat until thickened, stirring constantly.

Pour the cherry filling into the prepared pie crust. Dot the filling with butter.

Roll out the remaining pie crust and cut into strips. Create a lattice pattern on top of the pie.

In a small bowl, beat the egg yolk and milk together. Brush the crust with the egg wash.

Bake for 30-35 minutes or until the crust is golden brown.

Remove from oven and let it cool for at least 2 hours.

Dust with powdered sugar before serving.
