Ingredients
  • 2 pound Yams
  • 4 tablespoon Butter
  • 1 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pecans
  • 1/2 cup Mini Marshmallows
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the yams into 1/2-inch thick rounds.
  3. In a large saucepan, melt the butter over medium heat. Add the brown sugar, cinnamon, nutmeg, salt, and vanilla extract. Stir until the sugar has dissolved and the mixture is well combined.
  4. Add the sliced yams to the saucepan and toss to coat them in the sugar mixture.
  5. Transfer the yams and sugar mixture to a baking dish. Cover with foil and bake for 30 minutes.
  6. Remove the foil and sprinkle the pecans and mini marshmallows over the yams. Return to the oven and bake for an additional 15 minutes, or until the marshmallows are golden brown.
  7. Remove from the oven and let rest for 10 minutes before serving.
