Ingredients
  • 2 cup All-purpose flour
  • 2 tablespoon Granulated sugar
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter (cold)
  • 1 tablespoon Orange zest
  • 1/2 cup Heavy cream
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Fresh strawberries (diced)
  • 1 tablespoon Powdered sugar (for dusting)
Instructions
  1. Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut the cold butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
  3. Stir in the orange zest. Gradually pour in the heavy cream and vanilla extract, mixing until just combined.
  4. Gently fold in the diced strawberries.
  5. On a lightly floured surface, knead the dough a few times until it comes together. Pat the dough into a circle about 1-inch thick.
  6. Use a round biscuit cutter to cut out mini scones and place them on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the scones are golden brown.
  8. Allow the scones to cool for 10 minutes before dusting with powdered sugar.
  9. Serve and enjoy!
