  • 1/2 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Juice
  • 1/2 cup Heavy Cream
  • 1/2 cup Graham Cracker Crumbs
  • 2 tablespoon Unsalted Butter
  • 1/2 cup Fresh Berries
Instructions
  1. In a mixing bowl, beat cream cheese, sugar, vanilla extract, and lemon juice until smooth.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. In a small bowl, mix graham cracker crumbs and melted butter.
  5. Divide the crumb mixture evenly among 8 mini cups or ramekins and press down to form the crust.
  6. Spoon the cream cheese mixture over the crusts.
  7. Place the cups in the freezer and let them set for at least 4 hours.
  8. Before serving, garnish with fresh berries.
