Preheat the oven to 375°F (190°C).

Roll out the pie crust and cut out circles to fit your mini pie pans.

Press the crust into the pans and trim any excess.

In a bowl, mix together the cherry pie filling, sugar, cornstarch, lemon juice, and vanilla extract.

Spoon the filling into the crusts.

Place a second circle of pie crust on top and crimp the edges to seal.

Brush the tops with beaten egg.

Cut a few slits in the top crust to allow steam to escape.

Bake for 25 minutes, or until the crust is golden brown.
