  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut out circles to fit your mini pie pans.
  3. Press the crust into the pans and trim any excess.
  4. In a bowl, mix together the cherry pie filling, sugar, cornstarch, lemon juice, and vanilla extract.
  5. Spoon the filling into the crusts.
  6. Place a second circle of pie crust on top and crimp the edges to seal.
  7. Brush the tops with beaten egg.
  8. Cut a few slits in the top crust to allow steam to escape.
  9. Bake for 25 minutes, or until the crust is golden brown.
  10. Allow to cool before serving.
