Ingredients
  • 1.5 cup Graham cracker crumbs
  • 4 tablespoon Butter, melted
  • 16 ounce Cream cheese, softened
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoon All-purpose flour
  • 0.5 cup Strawberry jam
  • 1 cup Fresh strawberries, sliced
Instructions
  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a lined mini muffin tin.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice and flour.
  4. Spoon the cream cheese mixture over the crust in the muffin tin.
  5. Bake for 15-20 minutes or until the cheesecake is set. Remove from the oven and let cool in the tin for 10 minutes.
  6. Transfer the cheesecake bites to a wire rack to cool completely.
  7. Once cooled, top each bite with a dollop of strawberry jam and a slice of fresh strawberry.
  8. Refrigerate for at least 1 hour before serving. Enjoy!
