Ingredients
  • 12 slice Sponge Cake
  • 12 piece Marshmallows
  • 2 cup Desiccated Coconut
  • 200 gram Dark Chocolate
  • 2 tablespoon Butter
  • 1 cup Icing Sugar
  • 2 tablespoon Milk
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 180°C (350°F). Cut the sponge cake into squares. Place a marshmallow between two sponge cake squares. Melt the dark chocolate and butter in a heatproof bowl over simmering water. Dip each marshmallow sandwich into the melted chocolate mixture, ensuring it is fully coated. Roll the chocolate-coated sandwich in desiccated coconut. Place the coated sandwiches on a wire rack to set for 30 minutes. In a separate bowl, mix icing sugar, milk, and vanilla extract to make the icing. Drizzle the icing over the set lamingtons. Allow the icing to set before serving.
