Ingredients
  • 500 gram Mangoes
  • 200 gram Digestive Biscuits
  • 100 gram Butter
  • 250 gram Cream Cheese
  • 100 gram Powdered Sugar
  • 250 milliliter Whipping Cream
  • 10 gram Gelatin
  • 50 milliliter Water
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
Instructions
  1. Crush the digestive biscuits and mix with melted butter.
  2. Press the mixture into the bottom of a springform pan to form the crust.
  3. Chill the crust in the refrigerator for 15 minutes.
  4. Meanwhile, peel and dice the mangoes.
  5. In a blender, purée the mangoes until smooth.
  6. In a separate bowl, beat the cream cheese and powdered sugar until creamy.
  7. In another bowl, whip the whipping cream until stiff peaks form.
  8. Dissolve gelatin in water and heat in the microwave for 10 seconds.
  9. Add the gelatin mixture, lemon juice, and vanilla extract to the cream cheese mixture and mix well.
  10. Gently fold in the whipped cream.
  11. Pour half of the mango purée over the crust.
  12. Pour the cream cheese mixture over the mango purée.
  13. Top with the remaining mango purée.
  14. Refrigerate for at least 4 hours or overnight.
  15. Serve chilled and enjoy!
