Madeleines are named after a young French girl named Madeleine who was a cook in the 18th century. The iconic shell shape of the madeleine is said to have been inspired by the grooves on the top of her grandmother's scallop-shaped mold.

Ingredients
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 2 Eggs
  • 1/2 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
Instructions
  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, beat the eggs and sugar until pale and fluffy.
  3. Gradually add the melted butter, vanilla extract, and lemon zest to the egg mixture, mixing well.
  4. Gently fold in the dry ingredients until just combined.
  5. Cover the batter and refrigerate for at least 30 minutes.
  6. Preheat the oven to 375°F (190°C) and grease a madeleine pan.
  7. Spoon the batter into the molds, filling each about 3/4 full.
  8. Bake for 8-10 minutes or until the edges are golden brown.
  9. Remove from the oven and let the madeleines cool in the pan for a few minutes.
  10. Transfer to a wire rack to cool completely.
  11. Serve and enjoy!
