Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Brown sugar
  • 1/2 cup Vegetable oil
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup Apple
  • 1/2 cup Carrot
  • 1/2 cup Walnuts
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs and brown sugar until well combined. Add the vegetable oil, milk, and vanilla extract, and mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped apple, grated carrot, and chopped walnuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
