  • 500 gram Potatoes
  • 1 unit Onion
  • 1 unit Green bell pepper
  • 4 unit Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Butter
  • 100 gram Cheddar cheese
  • 10 gram Fresh parsley
Instructions
  1. Peel and dice the potatoes.
  2. Chop the onion and green bell pepper.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat.
  4. Add the diced potatoes, onion, and green bell pepper to the skillet and cook until the potatoes are golden brown and tender.
  5. In a separate skillet, melt the remaining butter over medium heat.
  6. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny.
  7. Season the potatoes with salt and black pepper.
  8. Sprinkle the cheddar cheese over the potatoes and let it melt.
  9. Transfer the cooked eggs onto the potatoes.
  10. Garnish with fresh parsley.
  11. Serve hot.
