Ingredients
  • 500 gram Potatoes
  • 1 cup Low-fat Greek yogurt
  • 1/4 cup Low-fat milk
  • 1/2 cup Reduced-fat cheddar cheese
  • 1/4 cup Green onions, chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Paprika
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise.
  4. Scoop out the flesh of each potato half, leaving a thin shell. Place the potato flesh in a bowl.
  5. Add Greek yogurt, milk, cheddar cheese, green onions, salt, and black pepper to the bowl with the potato flesh. Mash everything together until well combined.
  6. Spoon the mixture back into the potato shells. Sprinkle with paprika.
  7. Place the stuffed potatoes back on the baking sheet and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
