Cook bacon in a large pot until crispy. Remove bacon and set aside.

In the same pot, sauté onion and garlic until softened.

Add potatoes and vegetable broth to the pot. Bring to a boil and simmer until potatoes are tender.

Stir in milk, cheddar cheese, sour cream, salt, black pepper, and paprika. Cook until cheese is melted and soup is heated through.
