Linzer Cookies

Linzer cookies are named after the Austrian city of Linz, where they originated in the 17th century. They are traditionally made with a buttery almond dough and filled with raspberry jam.
This is vegetarian recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

In a mixing bowl, cream together butter and powdered sugar until light and fluffy.

Add egg yolks and vanilla extract, mix well.

Gradually add all-purpose flour and ground almonds, mix until dough forms.

Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one portion of the dough on a lightly floured surface to about 1/8 inch (3mm) thickness.

Using a round cookie cutter, cut out an even number of cookies.

Place half of the cookies onto the prepared baking sheet.

Spoon a small amount of raspberry jam onto the center of each cookie on the baking sheet.

Place the remaining cookies on top of the jam, pressing lightly to seal the edges.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Repeat steps 6-12 with the remaining portion of dough.

Once cooled, dust the cookies with powdered sugar.
