  • 1 cup Pumpkin puree
  • 1/4 cup Vegetable oil
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1 1/2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Cloves
  • 1/2 cup Chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the pumpkin puree, vegetable oil, eggs, and vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips. Spoon the batter into a muffin tin lined with paper liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
