Ingredients
  • 8 ounce Nilla wafers
  • 1 cup Butter
  • 1 cup Granulated sugar
  • 1 cup All-purpose flour
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon zest
  • 0.5 cup Lemon juice
  • 2 large Eggs
  • 1 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the Nilla wafers until finely crushed.
  3. In a medium bowl, combine the crushed Nilla wafers, melted butter, 1/4 cup granulated sugar, flour, salt, and lemon zest. Mix well.
  4. Press the mixture into the bottom of a greased 9x9-inch baking dish.
  5. Bake for 10 minutes, then remove from the oven and set aside.
  6. In a separate bowl, whisk together the remaining 3/4 cup granulated sugar, lemon juice, and eggs until well combined.
  7. Pour the lemon mixture over the crust and return to the oven.
  8. Bake for an additional 20 minutes, or until the filling is set.
  9. Remove from the oven and let cool for 1 hour.
  10. Dust with powdered sugar before serving.
  11. Cut into squares and enjoy!
