  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 tablespoon Granulated sugar
  • 1/2 cup Ricotta cheese
  • 1 Egg
  • 3/4 cup Milk
  • 1 teaspoon Lemon zest
  • 2 tablespoon Lemon juice
  • 2 tablespoon Butter
  • 4 tablespoon Maple syrup
Instructions
  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, mix together the ricotta cheese, egg, milk, lemon zest, and lemon juice.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet or griddle over medium heat and melt a small amount of butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with maple syrup.
