  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Granulated sugar
  • 0.25 cup Unsalted butter, melted
  • 0.75 cup Ricotta cheese
  • 2 large Eggs
  • 1 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 cup White chocolate chips
  • to taste for dusting Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. In a separate bowl, mix together the melted butter, ricotta cheese, eggs, lemon zest, lemon juice, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the white chocolate chips.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bis-cakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  7. Dust with powdered sugar before serving. Enjoy!
