Ingredients
  • 1.5 cup Persimmons
  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 0.5 cup Milk
  • 2 tablespoon Lemon juice
  • 1 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  6. Fold in the diced persimmons.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the lemon glaze by whisking together the lemon juice and powdered sugar until smooth.
  10. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes.
  11. Transfer the cake to a wire rack and pour the lemon glaze over the top.
  12. Allow the cake to cool completely before serving.
