Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cup Granulated sugar
  • 3 Eggs
  • 2 tablespoon Lemon zest
  • 2 tablespoon Fresh lemon juice
  • 1 tablespoon Fresh ginger, grated
  • 1/4 cup Buttermilk
  • 2 tablespoon Powdered sugar (for dusting)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the lemon zest, lemon juice, and grated ginger.
  5. Gradually mix in the dry ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes.
  9. Transfer the cake to a wire rack and let it cool completely.
  10. Dust with powdered sugar before serving.
