  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1/2 cup Greek yogurt
  • 1/2 cup Mixed nuts (e.g., almonds, walnuts, pecans)
  • 1/2 cup Mixed dried fruits (e.g., raisins, cranberries, apricots)

Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract, lemon zest, and lemon juice.
  5. Gradually mix in the dry ingredients, alternating with the Greek yogurt, beginning and ending with the dry ingredients.
  6. Fold in the mixed nuts and dried fruits.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, dust the top with powdered sugar before serving.
