Ingredients
  • 8 ounce Butter
  • 1 cup Granulated sugar
  • 1.5 cup All-purpose flour
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 1 large Egg
  • 0.5 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  2. In a medium bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the flour and salt, and mix until crumbly.
  4. Reserve 1 cup of the crumb mixture for the topping.
  5. Press the remaining crumb mixture into the bottom of the prepared baking pan.
  6. In a separate bowl, whisk together the lemon zest, lemon juice, and egg.
  7. Pour the lemon mixture over the crust in the baking pan.
  8. Sprinkle the reserved crumb mixture evenly over the top.
  9. Bake for 25-30 minutes, or until the edges are golden brown.
  10. Allow to cool completely in the pan on a wire rack.
  11. Once cooled, dust with powdered sugar.
  12. Cut into squares and serve.
