Ingredients
  • 8 ounce Butter
  • 1.5 cup All-purpose flour
  • 0.5 cup Powdered sugar
  • 0.25 teaspoon Salt
  • 4 large Eggs
  • 1 cup Granulated sugar
  • 0.5 cup Lemon juice
  • 1 tablespoon Lemon zest
  • 2 tablespoon All-purpose flour
  • to taste for dusting Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a medium bowl, mix together 5 cups of all-purpose flour, 5 cups of powdered sugar, and 25 teaspoons of salt. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared baking dish.
  3. Bake in the preheated oven for 20 minutes, or until golden.
  4. In another bowl, whisk together the eggs, 1 cup of granulated sugar, 5 cups of lemon juice, 1 tablespoon of lemon zest, and 2 tablespoons of all-purpose flour. Pour over the baked crust.
  5. Bake for an additional 25 minutes, or until the lemon mixture is set. Allow to cool in the baking dish on a wire rack.
  6. Once cooled, dust with powdered sugar. Cut into bars and serve.
